Taco A Mexican dish consisting of a small folded corn or flour tortilla filled with beef, pork, chicken, chorizo and/or refried beans and garnished with tomatoes, lettuce, cheeses, onions, guacamole, sour cream, and/or salsa ; can be crisp (deep fried) or soft. The tacos predates the arrival of Europeans in Mexico. There is anthropological evidence that the indigenous people living in the lake region of the Valley of Mexico traditionally ate tacos filled with small fish. Writting at the time of Spanish conquistadors, Bernal Diaz Castillo documented the first taco feast enjoyed by Europeans, a meal which Hernan Cortes arranged for his captains in Coyoacan.
